A Healthier Halloween: Chocolate and Almond Butter Crunch Bars

A healthier Halloween is possible – starting in your kitchen.

Diabetes and Halloween may not always feel like the most compatible of holidays, but if you have a child with type 1 diabetes there’s always ways to make it work.  My daughter has celiac disease and type 1 diabetes — and a birthday on Halloween (hello sugar).

I was understandably very excited to come across an article highlighting several blogs with Healthier Halloween Treat Recipes.   Chocolate and Almond Butter Crunch Bars from thehonoursystem.com is my favorite healthier Halloween recipe of the bunch.

Made with coconut oil and puffed quinoa where could I go wrong?

I was drawn to these goodies because of the healthful, short and gluten free ingredient list.  Kids can dive right into this recipe because it is so easy and quick to make.

4 Steps= Measure – mix – pour – freeze!

Chocolate and Almond Butter Crunch Bars Ingredients:

1/2 cup coconut oil, slightly melted but not hot

1/2 cup cocoa powder

1/2 cup natural almond butter

1/4 cup maple syrup

1/2 tsp vanilla extract

1 cup puffed quinoa

 

Instructions:

Line pan with parchment.

Combine all ingredients and stir.

Pour into 12 squares and freeze x 10 minutes- consider cutting in half for portion control.
