I love homemade granola, now I think I love this granola bar recipe even more.
There are many “bests” about this recipe starting with the no-bake concept (with due thanks to the microwave). The ingredients are incredibly healthful and most are found in your cabinet right now- bonus!
This recipe is not fussy at all. If you like dried fruit throw it in, if you are nut free don’t use them. The only thing I will add next time is broken gluten free pretzel pieces. I enjoy the mix of salty and sweet in a granola bar.
We spend a lot of money on gluten free bars which are not nearly as tasty or fresh as these are. No Larabars on the grocery list this week thank you very much. At $1.49 a pop they are a big hit on the wallet. We took these on a few hour ski today and they were filling and also stabilized my blood sugar during physical activity.
Gluten Free No-Bake Granola Bar Recipe
Ingredients:
2/3 Cup Honey
1/4 Cup Light Brown Sugar
1/2 Cup Almond Butter (peanut butter, cashew butter or another favorite will do)
1 Teaspoon Vanilla Extract
1/2 Teaspoon Ground Cinnamon
2 Cups Gluten Free Quick Cook Oats (ex- Bob’s Red Mill)
2 Cups of Barbara’s Organic Brown Rice Crisps (Gluten-Free)
1/4 Cup Unsweetened Shredded Coconut
1/4 Cup Raw Sunflower Seeds
1/4 Cup Slivered Almonds
1/2 Cup Semi Sweet Chocolate, roughly chopped
Instructions:
- Place a piece of wax paper in a 8×8 pan and spray lightly with gluten free non-stick cooking spray.
- Mix the nut butter, honey and brown sugar and place in the microwave for 1 minute. Mix and cook for another 30 seconds.
- Add vanilla, cinnamon and salt, mixing- then all of the other ingredients except the rice cereal and chocolate.
- Mix well with a spoon until ingredients are incorporated well.
- Add the cereal and chocolate- mix gently (don’t squish the cereal)
- Plop the mixture into the pan and gently press into the shape of the pan.
- Place in the refrigerator for 1 hour then cut into bars.
Recipe makes 14 bars, approx. carb count per bar is 20 grams.
