Dr. Phil’s Bars – Wholesome Deliciousness

Dr. Phil's Bars
After my family’s two week stint on a processed free diet most things have stuck with us.  Dr. Phil Maffetone and his podcast “Eat to Run” inspired us to embrace this diet in the first place – so I decided to make his famous “Dr. Phil’s Bars”.

These bars were a hit with my daughter and at her request I have made them since.  Both low carbohydrate and gluten free they fit perfectly into our diet.

These are well worth the effort to make for a number of reasons.  They are nutritious, high in protein, tasty and seriously beat paying the $3 plus a bar that we are accustomed to for the pre-packaged variety.  To boot, they hardly budged our blood sugars at all – they are more of a sustaining bar than a carbohydrate bomb.

With only 1/3 a cup of honey in the entire recipe the total carbs are approximately 109 grams.  You can do the math with how many total bars you make to equal carbs per bar.

You will need something to pulverize the heck out of the almonds so find a Cuisinart or a Vitamix or some other expensive piece of kitchen equipment to use.  Powdered egg whites were a bit difficult for me to find but I finally tracked them down at our small town natural grocery store and paid through the teeth for my container of organic powdered egg whites- sigh – keep in mind they will last for many recipes.

Dr. Phil’s Bars Recipe

Ingredients

Dry-

3 cups raw almonds

2/3 cup powdered egg whites

4 tablespoons cocoa powder

1/2 cup unsweetened shredded coconut

dash of salt

 

Wet-

1/3 cup of honey

1/3 cup hot water

1-2 tablespoons vanilla

 

Instructions

  • Grind dry ingredients.
  • Mix honey, hot water and vanilla, then blend into dry ingredients OR mix it all by hand if your mixer isn’t very efficient.
  • Shape into bars or cookies or press the batter into a dish about one inch deep and cut into squares.
  • Let them dry.  In some climates leaving them out does this, in others dry in a warm oven at 180-190 degrees F for 20-25 minutes. You can also adjust the water/honey ratio for palatable sweetness.
  • Keep refrigerated, they’ll still last a week or more out of the refrigerator.
