Sweet Potato Veggie Burger

veggie burger, gluten free, easy, recipe, healthyThis sweet potato veggie burger at lunchboxbunch.com looked fabulous – with a few essential replacements I made a delicious gluten free version.  Why bother with the store bought veggie burgers when you can create your own – most have gluten anyhow.

Stack your sweet potato veggie burger with favorite toppings – sweet onion – firm avocado slices – a fried egg – jalapenos or pickles.

 

Sweet Potato Veggie Burgers

makes 7-8 large patties

2 Cans beans – I used one can of cannellini white beans, drained and the other garbanzo beans
1 Large sweet potato, baked/peeled/mashed (about 2 cups)
2 Tbsp honey
1 Beaten egg
2 Tablespoons tahini
1 Tsp gluten free Cajun seasoning, 1 tsp salt and 1/2 tsp black pepper
Gluten free flour mixture – {3 tablespoons brown rice flour, 1 tablespoon potato starch, 1 1/2 teaspoons tapioca starch, 1/8 tsp xantham gum} sift together well.  If you have a GF flour blend use 1/4 cup of it instead of this special blend.

Gluten free bread crumbs (store bought or make your own – toast the heels of bread until they are hard, use a grater = bread crumbs!)

 

Sweet Potato Veggie Burger Directions

1. Bake potato – peel – place in large mixing bowl.
2. Drain beans – add to mixing bowl. Mash beans and potato together. ( I pureed half the mixture and mashed half the mixture for a nice consistency.
3. Add seasonings, honey, egg, tahini and the GF flour. Form into patties.  They will feel like mashed potatoes. (You can add more flour or a scoop of breadcrumbs until desired thickness.)
4. Heat 1 Tbsp extra virgin olive oil in a pan over medium high heat.
5. Roll the formed patties in the bread crumbs to coat well then drop the patty in the pan. Repeat until the pan is filled. Cook until browned on both sides.
6. Transfer cooked patties to cooling rack to rest for a few minutes.

Eat!
